"The Jerks" (Fatalii, Scotch Bonnet, Jerk Spice)

Meet The Jerks. Fatalii is the lean one with a sharp, citrusy bite, and he does all the heavy lifting. Scotch Bonnet is the stocky one who brings the fruit and takes half the credit.

We wood-smoked them, then hit them with allspice, thyme, ginger, scallion and fresh lime for a proper jerk sauce. Bright and smoky up front, with a heat that lingers and really sits with you. Rude? A little. Small batch, limited release: when it's gone, it's gone.
